I talked to my wife and she says she almost always uses the middle rack slot, leave the heat a little lower than called for (25 degrees or so) and cook whatever it is your cooking for a little less time than called for. Then check it often beyond that time. She also greases or oils the muffin and square cake pan we use. That's all she had to offer. Hope it helps!

Thanks! FWIW, even with my over-done situations, I've still been pretty amazed at how well that sleazy little oven works. For $25 at Amazon, it's hard to beat.

Not a Coleman, but I have a Camp Chef that is similar, and it helps to put some foil over most of the center part of the oven rack to diffuse the heat around the sides a bit.
