I believe these particular time lapses are done using interval stills, taken every 30 sec or 1 min, then sequenced together into a movie file. Not sure if the latest bodies have this feature, but I know there ie Canon software that lets you control a camera from a laptop to trigger the exposures.

Another, more expensive (data wise) way to do it is to just let the video run, and then speed it up in your editor to 10,000%. But you need a LOT of storage memory.

This was my low-tech first attempt at time lapse. You can hack the Canon software to accept scripts like this. This was a lazy afternoon's worth of one frame every 10 seconds on the front deck of the house. Opened as an image sequence in Quicktime and played back at 10 frames/sec. This was before Youtube would accept HD, so you have to suffer the low res. Oh yeah, guess I could have dropped the couple of frames where the honey bee visited my lens about half way through. :)
