Also, I am sure there are different options depending on what you want to spend. There are thin-wallet and thick-wallet aviators here, and their buying options probably don't overlap much.

I did one a while back, and need to post an update. I've been so busy riding and flying (just what I needed, another hobby), I have not taken the time. ANY definitive article an electric bikes will be out of date by the time it is posted, but to sum up: the single most important thing is name brand cells in the battery, Panasonic and Samsung are two of the respected quality cells that along with a quality BMS (battery management system) make for a safe as possible battery, and also good performance and long life. If your electric vehicle supplier glosses over or doesn't know the name brand and type of the individual cells that comprise the battery, shop elsewhere.
The scooter DeltaRomeo references is a good example as to what to AVOID, The fact they do not specify what cells they use tell me: Chinese crap. And, be aware of cheap Chinese cells that are counterfeit! Yeah, there is a booming business in cheap sub standard cells being rebranded and sold as something they are not. The best and about only way to get way to get good safe product is to deal with a reputable US BASED supplier, not some Alibaba or unknown outfit. That's why I mentioned the Luna scooter, it's the real deal and is supplied with known and quality components. As are all their bikes, sure the bikes themselves are Chinese supplied, but not the batteries. Luna is my and many others preferred supplier of all things electric, best prices (by far) and quality gear from a US based outfit, who ride what they sell and are enthusiasts first and foremost!
https://lunacycle.com Rear hub drives are OK, just, for riding around town, if you want to ride steep trail, you want a mid drive system. Mid drive for me, they also are balanced better, you can change a flat on the rear easier, and thanks to the motor working through the bikes gearing (unlike the hub drives, which are one speed) you can go slower and faster. My BBSHD equipped Montague folder I converted (a much better bang for the buck plus better performance then most store bought ready to ride bikes) to an ebike is approaching 1,000 miles of use, has been over 10K (riding, and while flying....) and 35+ MPH on city streets, and up trails so steep I am scared to ride back down them. It's the single best thing I've added to my little flying operation since the Airstreaks. Having a fun way to get around once landed is a real game changer. I'll post some more on the bike thread I started a while back, later.
Yesterday, a 1200' climb up to the ski area behind my place, to pick up my season pass. It's great having something else to do when the WX is crappy!
